Preheat the oven to 350F. Rinse the rice under running water. Boil 5 quarts water with a tablespoon salt. Throw the rice in and boil uncovered for 15 to 18 minutes. The moment that the rice becomes tender, drain under cold running water. Place it in a dish and dot with butter. Bake for a few minutes, stirring with a fork, to dry it out. This recipe is for all types of rice. However if you use rice that comes with cooking directions, follow the instructions strictly.
RICE PILAF :
Do not rinse the rice. In a large pan, place the oil, the chopped onions and cook over low heat until they turn golden. Add the rice. Stir and heat until it turns a milky color. In the meantime boil the water and pour over the rice, adding salt, pepper and a little pinch of saffron. Cover and cook over a low heat without stirring, simmering until the water is absorbed and the top of the rice is dotted with little holes. Turn off the heat. This method can be used for all rice. If you use rice that comes with directions, follow them strictly.
